Apple

The territory of Carrazeda de Ansiães lies on an interfluvial plain, demarcated to the south and west by the deep valleys of the Douro and Tua rivers, and to the north and north-east by a broad plateau, where a more uniform and quiet landscape emerges. What characterises this territorial and administrative district is undoubtedly its great landscape diversity and the indelible testimonies of its rich historical past.

In recent decades, with the growth in production, apples have become the main product of the region and are now a high quality fruit. Apples from the Carrazedense plateau are juicy and subject to the highest standards of selection before being commercialised.

Nas últimas décadas com o crescimento da produção, a maçã é o produto principal do território, sendo atualmente um fruto de elevada qualidade. A maçã do planalto carrazedense é  sumarenta e está sujeita aos mais elevados padrões de seleção antes de ser comercializada.

Other representative products

Traditional dish: Roast kid with roast potatoes and white rice

Ingredients: kid, salt, apples, garlic, bay leaves, chilli, paprika, lard, olive oil and water;


Preparation: wash and remove the fat from the kid, prick the kid with a skewer and marinate in water together with apples cut into four pieces and leave for 24 hours. Then remove the kid from the marinade and clean it thoroughly. At the same time, put the chopped garlic, bay leaves, chilli, paprika, lard, olive oil and a little water in a bowl and mix all the ingredients together to form a paste. With this mixture, the kid is stuffed and ready to go into the wood oven for 2h00. The potatoes are roasted on a separate baking tray and seasoned with salt, garlic, olive oil, bay leaves, white wine and paprika. The dry rice is prepared over a low heat and halfway through cooking it is transferred to an earthenware casserole that goes into the wood oven. Pieces of kid are cut up and placed on top of the earthenware casserole with a grill to make the rice more succulent.
